ABOUT US

We have more than 40 years of combined experience in biomedical research at academic institutions from Georgia to Denmark to Alaska. We collaborate with exceptionally talented experts at the Center for Space Medicine-Berlin, Harvard University, the University of Arkansas for Medical Sciences, the University of California, Berkeley, and Texas A&M University.
Melynda Sheri Coker, PhD
is the Chief Executive Officer of Bitterroot Innovations and a Research Assistant Professor at the University of Montana. With over 25 years of teaching in the sciences, she recently earned her PhD in Natural Resources and Sustainability from the University of Alaska Fairbanks. Dr. MS Coker has secured grants from the National Institutes of Health (NIH). She was the first to establish the unique value of nutrient profiles from free-range Arctic ungulates on the maintenance of skeletal muscle. Using stable isotope methodology, she also described rapid improvements in metabolic health in Alaska backcountry hunters. Starting a new career at the age of 63, she has published ten peer-reviewed manuscripts related to the regulation of metabolism. She has published eight peer-reviewed manuscripts on these topics. participated in a 7-week Ranger School immersion to gain firsthand insight into the challenges faced.
Robert H. Coker, PhD, FACSM, FTOS
is the Chief Scientific Officer of Bitterroot Innovations and a Research Professor at the University of Montana. Dr. RH Coker graduated with his PhD in Exercise Science from the University of Mississippi and completed research fellowships in Physiology at Vanderbilt University and the Copenhagen Muscle Research Centre. He has published sixty-seven peer-reviewed manuscripts focused on metabolic responses to physical activity and dietary modifications in health and disease. His research has been consistently supported by the NIH, Department of Defense, and the Veterans Administration. He regularly serves on review boards for the NIH and is the Associate Editor for the journal Frontiers in Physiology.

Drs. MS and RH Coker participated in a 7-week Ranger School immersion to gain firsthand insight into the challenges faced. As a Gold Star parents of an 18-D Green Beret and with support from her Special Forces family, they bring unmatched dedication, desire, and wisdom to support military needs.

We can be found hunting, fishing, and hiking with family and our 3 French Brittany Spaniels. Our daughter, Kiplin, who lives in Alaska, joins us often, as did our son, George.

The Cokers secure and prepare wild fish and game and forage fresh ingredients to support healthy lifestyles.

SSG George “Quint” Lindley Taber V lived for adventure, family, brotherhood, and service. From the mountains of Alaska to the battlefield, he pushed his limits, proving himself daily. A Special Forces 18D and Ranger, Quint was fiercely dedicated to the warfighter’s well-being. He identified a critical gap in military nutrition—muscle loss during extreme missions often leading to injury—and sought to change it. His legacy continues through Bitterroot Innovations, a mission to support the warriors he fought beside in a way to honor Quint.

SSG George Lindley Taber V

Green Beret | 18 Delta | Ranger

Our son, Staff Sergeant George Lindley Taber V—”Quint”—died suddenly on August 9, 2022, while attending U.S. Army Ranger School in Dahlonega, GA. He succumbed to injuries sustained during a severe weather incident.

Quint grew up in Florida and Arkansas as a wild child, playing Army, pulling pranks, gigging frogs, fishing, and hunting, none of which ever ended. Throughout college, Quint spent summers working as a first mate on a charter fishing boat in Ninilchik, Alaska, and later as a kayak eco-tour guide in Marineland, Florida. He thrived on adventure—whether he was searching for the perfect surfing wave or pushing his limits on extreme mountain hunts in Alaska. He earned a Bachelor of Science in Biology with a minor in Chemistry from Hendrix College in Conway, AR. Quint was an exceptionally talented writer and artist with a dry, vivid, and contagious sense of humor. His cracking chuckle is still imitated—with deep respect—by his teammates.

Quint enlisted in the Army in March 2017, completing Advanced Individual Training at Ft. Benning, GA. He earned the coveted Special Forces Tab in 2018 and continued his elite training through the 18D Combat Medical Sergeant Course, Military Freefall Parachutist Course, Spanish Language School, Special Forces Sniper Course, and Survival, Evasion, Resistance, and Escape (SERE) Course. He was assigned to Operational Detachment Alpha (ODA) 7214, A Company, 2nd Battalion, 7th Special Forces Group (Airborne), stationed at Eglin Air Force Base, Florida.

Quint had found his true purpose in life—his brotherhood within the Army Special Forces. He lived for the challenge, pushing himself to prove his strength and skill every day. At the time of his passing, he was doing what he loved, surrounded by the teammates he respected and trusted. He served his team and his country with unwavering loyalty, discipline, and honor.

These are the highest accomplishments of a man, whether he is eighty or thirty.

Quint was truly the “Man in the Arena.”

His Lasting Legacy

As a Special Forces Medic, Quint was deeply invested in the health and resilience of his teammates. He recognized a critical gap in military nutrition—muscle loss during extreme military operations where resupply is limited or nonexistent. He brought this concern to his parents, knowing they worked in this field for civilians. He was excited that they took on his request and fully supported their move to Montana, even picking out their garage apartment as his own.

Quint left behind countless memories, stories, and laughter. He is deeply missed by his family, friends, and military brothers and sisters whose lives he touched. Our man of few words left a lasting legacy—one of strength, service, and resilience.

We all look forward to rejoicing with him in God’s glory one day. Until then, he lives in our hearts, guides us toward resilience, and speaks to us on the winds.
